6-7 Campfire Marshmallows
1 cup flour
1 ½ tbl sugar
½ tsp salt
1 tbl baking powder
1 egg
2 tbl butter, melted and cooled slightly
1 c milk, plus 1-2 tsp
1 tsp unsweetened cocoa powder
1 tsp vanilla extract
6 oz plus 1/4 c chocolate chips
Sift dry ingredients into a medium bowl. Add the egg, butter and milk and stir until completely combined.
Remove half 1/3 c of pancake batter into a small bowl and add the cocoa powder and 1 tsp milk to the pancake batter. Place in squeeze bottle and be sure that you can squeeze it out fluidly. Add more milk as needed. To remaining batter, mix in the vanilla extract. Remove to another squeeze bottle. If batter is too thick, add more milk as needed.
Heat skillet and spray with spray oil. Using the squeeze bottle, write letters or shapes as desired with the chocolate batter and let set for a second or 2. Squeeze vanilla pancake batter and shape into a 2 inch round pancake. Drop 5-6 chocolate chips on top. When bubbly, flip and cook. Remove to plate. Cook remaining batter in similar fashion. This should make 12 -14 individual pancakes.
Roast 6-7 Campfire Marshmallows and place on side of the cake that does not have the writing, topping with another cake, s’morecakestyle. Melt 6 oz of chocolate and drizzle on your Sammiches.
